WHY IS TEMPERATURE SO IMPORTANT?
Sensitivity of taste changes at different temperatures. Each taste receptor has its own zone of sensitivity. For example, our hot tactile receptors peak sensitivity at about 45°C and our sweetness at around 37°C.
This causes the same coffee to keep changing in taste as it cools down. Using the Compass to monitor temperature allows you to predict and control what is experienced.
